recipe: cucumber ribbon salad

When I was a child, my parents always made dinner. Proper dinners, ones where we sat down together and turned off the television, at least for an hour or two. When it was particularly hot, one of my absolute favorite dishes was a cucumber and white onion vinegared salad that was always served in an old, ribbed, plastic bowl. This recipe is a bit of an update and variation on that.

2 English cucumbers, sliced into ribbons with a mandolin or vegetable peeler.
1/3 cup sushi or rice wine vinegar
2/3 tsp. sugar
1/2 tbsp. soy sauce
1 tbsp. sesame seeds

In a medium bowl, combine vinegar, sugar, and soy sauce. Stir until the sugar completely dissolves. Add cucumber ribbons and allow to soak in refrigerator for a minimum of one hour.

Add sesame seeds to garnish.
