recipe: lentil and green bean salad

I walked into work yesterday to find a plastic bag sitting amid the destruction generally wrought upon our breakroom table (half-empty water bottles, pens, advance copies of new releases, receipts, comic books) and within it were some of the most delicious looking green beans I’ve seen this summer.

spiced french lentils with green beans
2 cups dry french lentils
2 cups green or yellow beans
2 shallots, sliced
1/2 tsp. cumin
1/4 tsp. cayenne pepper
1/4 tsp. garam masala
2 tbsp olive oil
zest of 1 lemon
salt and pepper 

Wash lentils, add to a saucepot with twice the amount of 
water, and bring to a boil. Once you've reached a boil, 
add spices, cover,and reduce to a simmer for 20 minutes.

In a skillet on high heat, toss the green beans and 
shallots with a little olive oil, stirring frequently. 
Allow them to get just a hint of a char. Add the lemon 
zest, remove from heat.

Toss both together and serve.
