recipe: gazpacho

This chilled tomato soup is something I make every summer. It’s refreshing, jam-packed with vegetables, and a little spicy.

gazpacho

4 cups tomato juice
1 white onion, chopped
2 bell peppers, chopped
1 cucumber, diced
2 large tomatoes, chopped.
1 clove garlic, minced
3 tbsp. red wine vinegar
1/4 cup sweet chili sauce
2 tbsp. olive oil
1 tbsp. cumin
1/2 tsp. cayenne pepper
dash of sea salt & black pepper

Combine all ingredients and chill for at least one hour.
